This smear-surface-ripened cheese is pale when first released, but turns a light golden colour when ripe. Its flavour, when ripe, is said to be emphatic and its aroma hearty and pungent with a creamy texture, with a delicious yeasty taste

This blue cheese is produced with whole cows milk from one or more milkings that has been pasteurized. After a few months of traditional seasoning on wooden planks the cheese goes into barrels where it is garnished with aromatic herbs and spices. The result is a semi-hard, toma style cheese with blue veining, and a lovely strong piccante flavour.

Raschera is a soft, square shaped cheese made with cow's milk which must come from Piemontese cows. The outer-rind is grey-brown, and acquires reddish marks while maturing. It has a fine, delicate and nutty taste. The texture is consistent, elastic, with small ir regular holes dotted throughout the cheese.
