This smear-surface-ripened cheese is pale when first released, but turns a light golden colour when ripe. Its flavour, when ripe, is said to be emphatic and its aroma hearty and pungent with a creamy texture, with a delicious yeasty taste

This is a very new and unusual cheese as it has been cured with the "must" from the passito grapes from Pantelleria. It has a distinct rather piquant taste but always very smooth and pleasant yet never exaggerated. Quite rich with hints of apricots and almonds and all the fragrance of the flowers and herbs of the varied rich mountain pastures.
Toma Del Monte Regale DOP $12

Served with sliced pear and celery hearts
This cheese possess a soft, elastic consistency and a light, yellow crust. The colour of the 'pasta' is typically pale, yellow to ivory, and contains tiny holes as a result of the fermentation process. The taste is fairly buttery and salty but intensifies with age.
